Blackberry Vodka Infusion

This is a nice simple infusion makes a blackberry vodka that's perfect for both light refreshing summer drinks and even a couple complex concoctions.

The Recipe: Simply soak  fresh blackberries in vodka until the vodka has absorbed the level of flavor you think tastes best. I used half a punet of fresh blackberries and XXX of Vodka for an infusion lasting 5 days.

Directions: After washing the blackberries, I cut them in half, to expose more surface area to the vodka and also to make them fit into the bottle I had gotten for the infusion. Next, I put them into the bottle and filled it most of the way full with the Tito’s Vodka. It’s important to get a bottle that is able to seal tightly and then fill it almost to the top with the vodka, leaving some air in the bottle.  This allows you to shake the vodka up, which I did right after filling it the first time and then at least once a day during the infusion process just to make sure all the vodka gets exposed to the berries.

Comments: I ended up leaving the blackberries in the vodka for 5 days but the length of the infusion is purely a matter of preference. The longer the berries are in, the stronger the vodka will taste of them.  I simply took a little sip of the vodka each day, and after 5, it felt like it has absorbed a good amount of blackberry flavor that was starting to give the vodka some sweetness.  

It’s important to remember that the vodka will be diluted when put into a drink, so stopping right when it tasted exactly how you would want to drink it straight might result in cocktails that have less than the desired amount of blackberry flavor.
